Green Tea Cookies

Ingredients:
  • 1 cup all purpose flour
  • a two-finger pinch (plus thumb) of salt
  • 1/2 cup unsalted butter - warm, but not melted
  • 1/4 cup sugar
  • 1 egg yolk
  • 1 Tbsp green tea leaves
  • 1/4 cup white chocolate chips (optional)

Directions:

Blend flour and salt in a small bowl.

Beat together butter, sugar, egg yolk and tea leaves until fluffy - about 3 min on medium speed with a mixer or food processor. Gradually mix in flour until just combined - use low speed with electric mixers.

Roll dough into a log. Using cling wrap for this is the easiest way. Lay the dough out on the wrap, close it, then roll until the log is the diameter you want your cookies to be. Unwrap.

Freeze the log for 30 min to 1 hour.

Heat oven to 300 degrees F, then cut log into cookies. Lay on baking pan (lined with parchment is good) and cook for 13 minutes, checking after 10 min for doneness. Edges should be golden. Cool on wire rack.
