Steel Cut Oats Congee

Oats take the place of rice in this Asian-inspired dish. It's a perfect comfort food, especially if you're feeling a little under the weather.

Ingredients:
- 3 cups broth
- 1/2 cup steel-cut oats
- 1/2 cup minced mushrooms
- 1/4 cup minced carrot
- 1 tbsp grated ginger
- 1 tsp soy sauce
- 1/2 tsp rice wine vinegar
- salt to taste
- chili flakes to taste

Directions:
- In a medium pot over high heat, bring broth, oats, mushrooms, and carrot to a boil
- Turn the heat down to medium and add the ginger, soy sauce, and vinegar
- Cook for 20 mintues or so until the oats are cooked and the congee thickens
- Just before serving add salt and chili flakes to taste
